Bone broth was a way our ancestors made use of every part of an animal. Bones and marrow, skin and feet, tendons and ligaments that you can’t eat directly, can be us in a broth. The slow cooking causes the bones and ligaments to release healing compounds like collagen, proline, glycine, and glutamine that have the power to transform your health.
They also contain minerals in forms that your body can easily absorb such as calcium, magnesium, phosphorus, silicon and sulphur.
The collagen and gelatin in bone broth supports hair growth and helps to keep your nails strong.
The glucosamine in bone broth can actually stimulate the growth of new collagen, repair damaged joints and reduce pain as well as being very high in the anti-inflammatory amino acids glycine and proline.
Here is a simple recipe for a broth designed for a large slow cooker, but can be adjusted to suit smaller cookers.
– 2-3 roasted chicken carcasses (approx. 2 lbs. of bones), you can use beef or other bones if you choose. *Ask your butcher or chop larger bones into smaller pieces, ideally 2 to 3 inches thick. Smaller bones expose more bone marrow and allow for easier absorption into broth.
– 1 or 2 medium onions, unpeeled & quartered
– 1 head of garlic, unpeeled, cut in half crosswise
– 2 celery ribs, cut in 1 to 2 inch pieces
– 2 carrots, cut in 1 to 2 inch pieces
– 5 sprigs of fresh thyme
– 5 sprigs of fresh parsley
– 1 bay leaf
– 1-1/2 teaspoons peppercorns
– 1-2 tablespoon cider vinegar
Add all of the ingredients to slow cooker. Cook on low for 10-12 hours. While still hot, pour through a strainer to remove the solids.
Pour broth into a large bowl or container, cover, and refrigerate overnight or until completely chilled. Scrape the hardened fat from the top and discard.
Broth can be refrigerated for up to 5 days. For extended storage, it should be frozen
You can use broth as a base for a soup or add meat and vegetables to it to make up a complete meal.
