Summer is well and truly here, we are getting record breaking temperatures so lets indulge in cold desserts!

Popsicles are a favorite amongst pretty much all children, and the good news is that they are so simple to make. Not only that, they can be made healthy, full of flavor and junk free!

Here are some healthy popsicle recipes:

1. Strawberry Watermelon Popsicles

Servings: About 10

Ingredients:
• 3 heaping cups cubed watermelon
• 1 heaping cup strawberries (fresh or frozen)
• Zest and juice of one lime

Instructions: Place all ingredients in a blender and puree until completely smooth. Pour into popsicle molds, add sticks and freeze 3-4 hours (or until solid)

2. Raspberry Chocolate Fudgesicles

Servings: About 8

Ingredients:
• 1 Can full-fat coconut milk
• ¼ Cup avocado (1/2 cup of a small avocado)
• ¾ Cup raspberries, divided
• 5 Whole Medjool dates (add more for more sweetness)
• ¼ Cup raw cacao powder

Instructions:
1. Place all ingredients in a blender except 1/4c of the raspberries
2. Blend until smooth and put through a fine mesh serve or cheesecloth
3. Chop the remaining raspberries into small pieces and fold into the batter
4. Pour batter into popsicle molds (and add sticks) according to manufacturer’s instructions and freeze for about 5 hours or until solid

3. Vanilla Pineapple Popsicles

Servings: About 7

Ingredients:
• 1lb Freshly peeled, cubed and cored pineapple (about 4 cups)
• ½ Teaspoon vanilla bean paste
• 1 Pinch sea salt

Instructions:
1. Add all ingredients in a blender and process until smooth
2. Spoon pineapple mixture into popsicle molds, making sure not to fill over ‘full’ line. Tap mold on hard surface to ensure any air bubbles are out before inserting sticks
3. Put in freezer about 4 hours or until solid, and enjoy!

4. Creamy Chocolate Coconut Popsicles

Serves: About 6

 Ingredients:
• 1 13-ounce can of full-fat coconut milk
• 1/3 Cup raw cacao powder
• 2-3 Teaspoons raw honey
• 1 Teaspoon vanilla extract

 Instructions:
1. Put all ingredients in blender and blend until smooth
2. Pour mixture into popsicle molds (and add sticks) and freeze for about 2 hours or until solid
3. Take out of molds and enjoy

5.Almond Butter Banana Popsicles

Servings: 8-10

Ingredients:
• 4 Bananas
• ¾ Cup Organic Unsweetened Almond Butter
• ½ Cup + 2 tbsp. unsweetened almond milk
• 1 Tbsp maple syrup
• ½ Teaspoon vanilla extract

Instructions:
1. Place all ingredients in blender and puree until smooth and creamy. Taste and adjust sweetness as needed
2. Pour batter into popsicle molds, add in sticks and freeze for 6 hours (or until solid)
3. And enjoy!

6.Strawberry Mango Chia Popsicles

Servings: About 10

Ingredients:
• 1 ½ Cups strawberries (fresh or frozen)
• 1 ½ Cup mango pieces (fresh or frozen)
• 1 ¼ Cup coconut water
• 4 Teaspoons chia seeds
• 1 Teaspoon honey

Instructions
1. Puree strawberries with half of the coconut water in a blender. Taste mixture and blend in honey to desired sweetness if needed. Stir in 2 teaspoons chia seeds. Set aside
2. Puree mango with other half of coconut water in a blender. Taste mixture and blend in honey to desired sweetness as needed. Stir in remaining 2 teaspoons of chia seeds.
3. Alternately pour each fruit mixture (for marbled look) into popsicle molds, add in sticks and freeze until solid.

7.Peaches and Cream Popsicles

Servings: About 10

Ingredients:
• 2 14oz Cans full fat coconut milk
• 1/3 Cup maple syrup
• ½ Cups shredded coconut
• 1 Teaspoon vanilla extract
• 1 ½ Cups peaches cut into small chunks

Instructions:
1. Mix all ingredients (except peaches) in a bowl
2. Drop a few peach chunks into each popsicle mold and cover with coconut mixture. Add more peach chunks then fill up each mold with coconut mixture. Add sticks
3. Freeze until solid
4. Enjoy!!

8.Kiwi Fruit Popsicles

Sevings: About 8

Ingredients:
• 10 Ripe organic kiwis
• 1/3 Cup coconut water
• 1 Lime, juiced

Instructions:
1. Peel, cut and toss 8 kiwis into blender with lime juice and coconut water. Set aside (blend long enough for green to combine, but not so long that black seeds start to break apart.
2. Cut other two kiwis into cross sections and place one in each popsicle mold.
3. Fill molds with kiwi paste and add sticks
4. Let freeze until solid, and enjoy!

9.Chocolate Dipped Avocado Popsicles

Servings: About 10

Ingredients
• 4 Small, ripe avocados
• 1 Lime, zest and juice
• 1 ½ Cups full-fat coconut milk
• 2/3 Cups coconut sugar
• 1 Cup dark chocolate chips (Enjoy Life is preferred brand, but any will work)
• 3 Tablespoons extra-virgin coconut oil
• ¼ Cup Roasted, unsalted pistachios (chopped)
• 1 Tablespoon sea salt

Instructions:
1. Add avocado, lime zest and juice, coconut milk and coconut sugar in a blender and blend until it reaches a pudding-like consistency.
2. Pour mixture into popsicle mold (with sticks) and freeze for at least 3 hours (or until solid)
3. In a double-boiler, add chocolate chips and coconut oil and melt (or put in microwave safe bowl and heat in short bursts until melted). Transfer melted chocolate into a tall glass jar that a popsicle can be dipped into.
4. Have pistachios and sea salt out and ready. Put a rimmed baking sheet out to the side. Take popsicles out of mold, dip each one in chocolate dip, and sprinkle quickly with crushed pistachios and sea salt.
5. Put back in freezer until completely frozen and enjoy!
