While strawberries start to ripen as early as March, making summer the perfect season for the most popular berry in the world. Strawberries are a all-round fruit that can be enjoyed fresh, in dessert, salads, and  smoothies etc.. Here a few of my favorite recipes that I found that are simple and insanely delicious too!

Individual no-bake strawberry cheesecake desserts

6 large fresh strawberries, 4 ounces after trimming

12 ounces cream cheese, softened
2/3 cup sour cream
1 cup granular Splenda
1 teaspoon vanilla extract
Crumb Crust( optional)

Coarsely chop the berries and place them in a food processor. Add everything but the crumb crust and process until smooth, scraping down the sides as needed. Place about 3 tablespoons of the crumbs in the bottom of 6 dessert dishes. Press down to compact the crumbs a little. Divide the cream cheese filling among the dishes. Chill well before serving.

Crumb Crust: 4 ounces almond flour, 1 cup
2 tablespoons whey protein isolate, vanilla flavor
2 tablespoons butter, melted
1/16-1/8 teaspoon salt

Blend all of the ingredients in a small bowl and spread in a greased 9″ pie plate. Bake at 350º 10-12 minutes or until lightly browned, stirring the crumbs after half the time. Watch closely the last couple minutes; they will brown very quickly. Cool completely before using.

Makes 6 servings
Can be frozen

Strawberry Coconut Milk Smoothie

1 cup of coconut milk

1/2 cup of frozen strawberries

2 tbsp Unsweetened shredded coconut

1/2 tsp vanilla extract

1 scoop of strawberry whey protein

Pour ingredients into blender container, cover.

Blend on high speed until smooth. Serve immediately.

Avocado and strawberry spinach salad

8 oz cooked chicken breast strips

6 cups fresh baby spinach

1 pint strawberries, hulled and sliced

1 avocado, diced

4 ounces crumbled blue cheese

1/4 cup sliced almonds

half a small red onion, thinly sliced

3 tbsp of olive oil with balsamic

Toss all ingredients together with your desired amount of dressing until combined. Serve immediately. You can also switch chicken for grilled salmon.
