What is beetroot all about? 

Beetroot is a root vegetable with a sweet flavour. It is rich in betalains – a phytonutrient with antioxidant and anti-inflammatory effects. The beetroot greens are also very nutritious.

Though beetroot has the highest sugar content of all vegetables, you can benefit from eating beetroot a few times a week (eat the greens in unlimited amounts) because of its superb nutrients.

1) Beetroot Protein Shake

This protein shake is one the delicious beetroot recipes. It is great for breakfast.

Serves 1

Prep time: 15 minus

INGREDENTS:

1/2 medium raw beetroot, unpeeled and diced
10 nuts (walnuts and/or almonds)
3/4 cup filtered water
1/2 avocado
Juice of 1 small fresh lemon

INSTRUCTIONS:

Put all ingredients in a high-speed blender
Blend everything until a fluid consistency is reached
Add more water if needed
Drink immediately.

2) Spicy Beetroot Smoothie

This spicy smoothie is one of the delicious beetroot recipes. It is also great for breakfast.

Serves 1

Prep time: 15 – 20mins

INGREDIENTS:

1/2 raw beetroot, unpeeled and diced
1/4 fresh ginger, minced
1/2 tablespoon chia seed
1 cup unsweetened almond milk
1/8 turmeric powder
dash of black pepper
1/2 medium red apple
Juice of 1 small fresh lemon
filtered water

INSTRUCTIONS:

Put all ingredients in a high-speed blender
Blend everything until a fluid consistency is reached
Add more water if needed
Drink immediately

3) Beetroot, Red Cabbage & Avocado Salad:

This salad is one of the yummy beetroot recipes. Salads are a great idea for lunch.

Serves 1

Prep time: 20mins

INGREDIENTS:

1/2 medium raw beetroot, unpeeled and grated
1/2 cup red cabbage, shredded
1/2 avocado, sliced

SALAD DRESSING:

1 tablespoon extra-virgin olive oil
2 tablespoons balsamic vinegar
dash of black pepper
1 teaspoon freshly squeezed lemon juice

INSTRUCTIONS:

Place all salad ingredients in a serving bowl
Mix together the salad dressing ingredients
Pour salad dressing over the salad
Serve salad with any protein of your choice. If you are a vegetarian/vegan (serve with chickpeas or beans). If you are not a vegetarian/vegan (chicken, fish, turkey or lean meat)

4) Beetroot and Green Salad with Chickpeas

This beetroot and greens salad with chickpeas is one of the delicious beetroot recipes. It is also great for lunch.

Serves 2

Prep time: 20mins

INGREDIENTS:

1 medium raw beetroot, unpeeled and grated
2 beetroot leaves, finely chopped
1 medium red apple, chopped
11/2 cups cooked chickpeas

SALAD DRESSING:

2 tablespoons freshly squeezed orange juice
2 tablespoons extra-virgin olive oil
1/2 teaspoon black pepper
Dash of sea salt

INSTRUCTIONS:

Combine the beetroot, beetroot greens and apple in a bowl
Whisk together all the ingredients for the salad dressing
Pour the salad dressing over the salad
Serve with the cooked chickpeas.

 

5) Roasted Beetroot and Butternut Squash Served with Wild Salmon and Sauce:

This roasted dish is one of the yummy beetroot recipes. It is great for dinner.

Serves 2

Prep time: 60 mins

INGREDIENTS:

2 Wild Salmon fillets
1/2 butternut squash, remove skin and cut up in cubes
2 medium raw beetroot, unpeeled and cut up in cubes
dash of sea salt
extra-virgin olive oil

FOR THE SAUCE:

2 tablespoons balsamic vinegar and1 tablespoon sesame oil

3 tablespoons freshly squeezed orange juice

1 teaspoon orange zest
1 teaspoon minced fresh ginger

INSTRUCTIONS:

Place beetroot and butternut squash in a bowl, coat in olive oil and sprinkle a dash of sea salt
Roast in the oven for about 40mins. When ready, set aside in a plate
In a skillet, warm 1 tablespoon of olive oil on low heat
Place salmon in the oil with its skin side down, cover skillet and let salmon cook.
Combine ingredients for the sauce in a small saucepan and cook for about 2 -3 minutes.
Pour sauce over salmon, keep turning salmon on each side and continue to cook until salmon is properly cooked. This should take about 10 minutes.
Place roasted beetroot and butternut squash on a serving plate and server with the salmon.
