1) Apple Lemon Custard

1 organic apple, chopped | 2 whole organic eggs, beaten|1/2 fresh lemon, juiced|1 teaspoon of raw honey|1 lemon, rind finely grated|1/2 cup coconut milk
-To make the custard, heat the lemon juice, lemon rind, coconut milk and honey in a pot until it starts boiling. Slowly add the beaten eggs, stirring continuously and strongly until the custard has thickened. Remove from heat
-Cool custard slightly and serve with the chopped apples
2) Coconut and cocoa nibs Macaroons
One of the dairy-free and gluten-free low fat desserts rich in polypenols which have antioxidant and anti-inflammatory activity.
2 cups organic unsweetened desiccated coconut | 1 teaspoon vanilla extract|1 teaspoon coconut nectar| 4 egg whites from large organic eggs (this should make 1/2 cup)|2 tablespoons of filtered water|2 tablespoons of organic cocoa nibs
-Preheat oven to 180 degrees C
-Line baking pan with baking sheet
-Pour egg white, vanilla and filtered water into a bowl and mix
-Mix the coconut nectar , cocoa nibs and unsweetened desiccated coconut together in a separate bowl.
-Mix the dry and wet ingredients together. Let it set for about 1 or 2 minutes.
– Roll the mixture into separate balls a little bigger than an inch in diameter. Place on the baking paper at least half an inch apart and slightly flatten.
-Bake in the oven for 12-15 minutes. When it is golden brown at the bottom, it is ready to be served.
-Cool and store in an air tight container
3) Blueberry and banana frozen dessert

1/2 medium banana|2 cups of blueberries|1/3 cup coconut milk|1 teaspoon of honey| 1 egg white, beaten|1/2 nutmeg
-Blend together the blueberries, banana, honey and coconut milk until it is thoroughly mixed together
-Fold the beaten egg white gently through the blueberry and banana mixture .
-Pour the mixture into a freezer proof container and freeze it for roughly about 6 hours until it is set or you can freeze overnight
-It is now ready to be served. Cut into slices to serve
4) Coconut flour & Cocoa biscuits
Another one of the healthy gluten-free low fat desserts rich in antioxidants, magnesium and dietary fibre.
1/3 cup coconut flour|5 teaspoons of coconut oil, softened but not melted|4 organic eggs|½ teaspoon baking powder|1 tablespoon of cocoa nibs|1 teaspoon of honey
-Preheat oven to 180 degrees centigrade
-Put all the ingredients into a medium sized bowl and mix with a hand mixer until it is fully integrated
-Use a spoon and scoop nine balls onto a baking paper and mash each one down with a spoon to make it ½ an inch thick
-Bake in the oven for 15mins until it starts to turn brown.

5) Blueberry Muffins

1/2 cup organic blueberries | 2/3 cup organic coconut flour | 1/4 teaspoon sea salt | 1 teaspoon organic vanilla extract | 1 teaspoon coconut nectar | 6 large free range eggs (room temperature) | 1/4 cup filtered water | 1/2 cup virgin coconut oil, melted | 1 teaspoon aluminium free baking powder
-Heat oven to 180 degrees c.
-Grease pan generously with butter or line with muffin liners.
-Whisk the eggs until whites and yolks are well-mixed. Pour in the coconut oil while continuing to whisk.
-Add salt and vanilla and mix until combined.
-Mix the remaining dry ingredients – coconut flour, coconut nectar and baking powder- in a medium bowl.
– Mix the dry ingredients into the wet.
– Whisk in water, one tablespoon at a time. You want to get it to a consistency that will hold up the berries, but not be too thick. Add more water (up to 2 more tablespoons) if necessary.
-Gently mix in the berries and divide among muffin cups. Bake for about 15 to 18 minutes, or until just turning golden on
-It is now ready to be served
