In the cold winter months we reach for more comfort foods, probably because when carbohydrates are broken down into energy they produce heat to keep us warm.

There is no need to feel guilty about eating these healthy sweet potato pies though, their sugars are released more slowly into the blood stream, providing a constant source of energy, rather than creating the spikes and dips common with white fluffy foods like cakes, breads and pastries.

Sweet potatoes are packed full of vitamins, minerals and antioxidants necessary to boost the immune function and reduce inflammation.  And we should embrace the addition of healthy fats, as these will promote absorption of beta-Carotene in the body.

Sweet potatoes also contain one third of the daily requirement of Manganese and good levels of Vitamin C, B5, B6 and Potassium.

There are three recipes to choose from, depending on your taste buds…

Cold:  cheesy and garlicky

Warm: Infused with orange zest, cinnamon and nutmeg

Spicy: heavy on the chilli, smoked paprika and garlic

Each pie takes no more than 30 minutes to make from start to finish, which is much quicker than ordering a stodgy pizza.

Sweet Potato Pie with Feta, Spring Onion and Toasted Garlic 

(Feeds one)

1 sweet potato cut into evenly sized rings
1 carrot cut into rings
1 clove garlic, chopped
1 spring onion chopped
1 tsp coconut oil
40g feta cheese, crumbled
1 tsp sesame seeds
Ground black pepper to taste

1.  Steam the sweet potato and carrot for approximately 15 minutes (or until tender), then mash.

2.  Preheat the grill to medium.

3.  Toast the garlic; heat a frying pan to medium/low heat and add the oil, then the garlic. Fry the garlic until it starts to change colour, but not burn (this should take about 30 sec).  Add to the mash.

4.  Add the spring onion, feta and pepper to the mash and combine.

5.  Transfer to an ovenproof serving dish (I used a ramekin) and sprinkle the top with sesame seeds.

6.  Place under the grill until nicely coloured.

Warming Sweet Potato Pie

(Feeds two)

2 sweet potatoes cut into rings
½ tsp ground cinnamon
¼ tsp ground nutmeg
Zest of 1 orange
½ tsp toasted sesame oil
1 tsp peanut butter
1 tomato sliced
1 tsp chopped pumpkin seeds
Black pepper to taste
Himalayan salt to taste

1.  Steam the sweet potato until tender (approximately 15 minutes), then mash.

2.  To the sweet potato add cinnamon, nutmeg, zest of orange, sesame oil, peanut butter, black pepper and salt and mash.

3.  Transfer to two ramekins, or one larger heatproof dish.

4.  Top the potato with sliced tomato and place under the grill until starting to colour.

5.  Sprinkle the tomato with chopped pumpkin seeds and return to the grill for 30 seconds.

Spicy Sweet Potato Pie

(Feeds one)

1 sweet potato cut into rings
1 carrot cut into rings
1 clove garlic
1 dessertspoon peanut butter
Zest and juice of 1 lemon or lime
½ tsp toasted cumin seeds
½ tsp smoked paprika
1 tsp soy sauce (or to taste)
2 sun dried tomatoes, chopped
Ground black pepper to taste
1 chopped fresh red or green chilli (less if you dislike spicy)

1.  Toast the cumin seeds:  preheat a dry frying pan to medium and add the seeds. Turn the seeds in the pan frequently until they start to give off a smell (this should take approximately 30 sec).  Take care not to burn the seeds. Remove from heat.

2.  Steam the sweet potato, garlic and carrot for approximately 15 min until tender, then mash.

3.  Add the rest of the ingredients and mash again.  Check seasoning and adjust.

Transfer to an ovenproof dish i.e. ramekin and place under the grill until nicely coloured.
