With it being Christmas time there is a whole load more other treats hitting the shops with you being tempted round every corner!! Sadness swells up inside you as you think how much you would love to eat and try some mince pies but the thought of how many calories in each makes you feel like you gain weight even at the sight of them! *SWOOSH* And so enters the new amazing gluten free and lower calorie option! And like the morning after a long storm the sun rises, happiness swelling deep within you knowing now you too can indulge in the epic taste of Christmas without worrying as much! Nutritional Info

BOOM Primal Will wins on all fronts as well as taste!! Lower calories, carbs and fats you really can’t go wrong! So let’s get makin’ & bakin’ already!For pastry:

  • 115g Rice Flour or Gluten Free flour
  • 70g Yogurt or soya yogurt for to make it vegan
  • 1.5 tbsp truvia (or any sweetener you like)
  • pinch salt
  • 1/4 tsp xantham gum
  • 40g melted coconut oil or butter for non vegan option
  • 1/2 tsp nutmeg & cinnamon

For filling:

  • I used a pre made organic mincemeat 100g ( mine was vegan though check the label to be sure)

For Topping – use either more pastry or my sugar free marzipan

  • 50g Almonds
  • 35g “Truvia”
  • 1 Egg white – you could use a chia egg to keep it vegan
  • 10g casein or pea protein for vegan

SET your oven to 190C SIFT flour and all powders in to a big bowl ADD yogurt and combine till it forms bread like crumbs STIR in the melted coconut oil to form a big dough WRAP in clingfilm and leave 10-15mins ROLL it out with a rolling pin (funny story this is where I realised I don’t own a rolling big and so I sufficed with my hands and a wine bottle/poster holder, looking rather stupid tyring to roll dough with them HA!) CUT your pie shapes and place in muffin tray.

SLAM them in the oven for 15mins

BOSH all ingredients in a blender BLEND ROLL out and cut into shape DONE
