A healthy Christmas Day

I like to focus on the vegetables on Christmas Day and make them the star of the show. For that reason, I have set out some different vegetable recipes especially for you…

I love mince pies and I have over the years perfected a healthy but tasty mince pie. I find making my own mincemeat is best as it really is delicious and you can be assured there are no added ingredients that you don’t want.

I have also included a stuffing recipe because again this is a food that can typically have additives in it if shop bought, it really is easy to make and well worth it.

Sweet potato puree

Serves 4

Ingredients:

– 5 large sweet potatoes
– 1 teaspoon of cinnamon
– 2 tablespoon of olive oil or coconut oil

Method:

1. Cut sweet potato into same sized chunks
2. Place in a pot of water
3. Bring to boil
4. Simmer for 8-10 minutes
5. Drain

Place potatoes in a food processor, add cinnamon and oil, and add seasoning to taste and blend.

Roasted leek and butternut squash

Serves 4

Ingredients:

– 1 butternut squash, leave skin on if you like
– 1 leek
– 3 cloves of garlic
– 1 tsp. oregano
– olive oil

Preheat oven to 180 degrees Celsius

Method:

1. Chop squash up into cubes
2. Chop leeks into large chunks
3. Flatten garlic with knife but leave skins on
4. Sprinkle oregano over squash
5. Drizzle olive oil over the top

Roast in oven for 25-25 mins

Top tip: Before cutting a butternut squash, put it in the oven at about 160 degrees Celsius for 5 minutes. Take it out and let it cool and start to chop, it will be softer and easier to cut.

Spiced apple and red cabbage

Serves 4-6

– 1 onion
– 1 apple
– 1 red cabbage
– 20 ml apple cider vinegar
– 100 ml water
– 1 tsp. cinnamon
– 1 tsp. fennel seeds
– Salt and black pepper
– 1 tablespoon olive oil

Method:

1. Chop onion into quarter chunks
2. Chop apple into quarter chunks
3. Sauté in olive oil for 3 minutes
4. Chop red cabbage into shreds
5. Add red cabbage
6. Add apple cider vinegar and water
7. Add cinnamon and fennel seeds
8. Bring to boil
9. Simmer for 45 minutes and serve when ready

Christmas Stuffing

Serves 8

Ingredients:

– 500g grass fed beef or pork mince
– 1 onion
– 1 clove of garlic
– 1 cup of chestnuts
– 1 red pepper
– Small handful of cranberries
– Small handful raisins
– 1 egg (whisked)
– Half cup of chopped parsley
– 1 tsp. fennel seeds
– ½ cup of oats

Method:

1. Sauté onion, garlic and pepper in some olive or coconut oil – once soft take of the heat and leave to cool
2. In a large bowl break up the mince
3. Add the cooled onion mixture
4. Add tbsp. of tomato paste
5. Add whisked egg
6. Add remaining ingredients
7. Mix together well until all blended in.

I make in advance and freeze in the dish I am going to cook it in. Remember to take out the freezer on Christmas Eve and cook in the oven at 180 degrees Celsius for 45 minutes

christmas dinner recipes_2Gluten dairy free mince pies

Ingredients:

– Mincemeat
– 2 apples
– 60g raisins
– 20g goji berries
– 4 dried apricots
– Tsp. cinnamon
– Tsp. mixed spice
– ½ tsp. of almond extract
– Handful of walnuts, chopped
– Handful of pistachio nuts, chopped
– 50 ml water
– 2 squirts CherryActive (optional)

Method:

1. Using coconut oil grease a bun tin
2. Preheat oven at 180 degrees Celsius

For the mincemeat:

3. Chop apples and add to a pan
4. Add the rest of the ingredients bar the nuts
5. If using CherryActive mix with water and add to the pan
6. Cook on a medium to low heat
7. Cover with a lid
8. Once stewed and soft put mixture in a bowl to cool down and add the nuts and mix in.

Pastry

– 60g coconut oil
– 25g xylitol or brown sugar
– 50g almond flour
– 50g buckwheat flour
– 50g gram flour (chickpea flour)

For the pastry:

1. Cream butter and sugar together till light and fluffy
2. Add the flours and mix together until soft dough
3. Wrap dough in cling film or freezer bag and place in fridge for 20 minutes
4. After twenty minutes roll out and use a 2.5-inch round cutter to make the base of mince pies and place in tin. This amount makes about seven or eight.
5. With a dessert spoon, spoon the mincemeat mixture into the bases.
6. Cut 2-inch rounds for the top. It can be a bit fiddly as mixture is quite oily and you may have to do a patchwork job in tin but its still works.

Bake in oven for 15 minutes
