Here is the next mouth-watering meal in our continuing series of Paleo recipes provided exclusively by the man at the forefront of the worldwide Paleo eating movement – Pete Evans. Pete is a superstar celebrity chef in his native Australia and also has popular TV shows in the USA. After much research as well as on-going collaborations with leading scientists and health experts, Pete developed The Paleo Way  and has been educating people in the benefits ever since.

His research has taken him around the world and his Paleo way of eating his reached millions and opened their eyes to a new and healthy way of eating that sits outside of the usual fad diets and quick-to-sell-quick-to-disappear programmes. WatchFit is delighted that Pete and his team of experts is providing us (and you!) with two recipes each month to try yourself and come back for more!

This time we have Brussels Sprouts with Bacon and Garlic. It is possible this might raise a few inquisitive eyebrows. Brussels Sprouts have a habit of dividing people – those who like them love them (and see them as absolutely key to a traditional Christmas dinner!) whilst others hold the opposite viewpoint!

However, Brussels sprouts are a fantastically healthy food and are associated with cholesterol lowering, improved DNA within our white blood cells and are known to be one of the very best vegetables when it comes to exhibiting cancer prevention properties. The sprout might not find fans in all quarters but it is a proven high performance health vegetable!

And bacon might not strike you as being high on the health list.

Being that it’s often associated with a classic fry up or a sauce soaked sandwich. However bacon is full of health benefits too! It provides high protein/low carb energy, is good for lowering blood pressure and sugar levels, is full of choline – which is an aid to intelligence and memory, and it is a fine source of Vitamins B1, B3, B6, B12 and zinc, magnesium, iron and protein.

And at a protein to fat ratio of 4-1, it has one of the highest balances in any meat, fish or fowl found on the planet! And as for garlic – most of us have heard mention of its healthy properties. The ancient Greek physician and father of  western medicine Hippocrates, frequently prescribed garlic for a number of conditions and much more recently , modern science has been able to confirm many of these garlic health benefits.

These include: being highly nutritious, but low in calories, very vitamin rich, blood pressure reduction, cholesterol lowering, packing a punch with anti-oxidants and effective detoxification of heavy metals in the body. Here is how to combine all three the delicious Paleo Way!

 

Brussels Sprouts with Bacon and Garlic

(Serves 4):

80 g (⅓ cup) duck fat

200 g  pasture raised bacon –  roughly chopped and with the rind removed

8 cloves garlic, sliced

600 g  Brussels sprouts, chop each one into half

Take a large, heavy based frying pan and, over a medium heat, heat the duck fat. Add to this the bacon and garlic and cook for 4-6 minutes until lightly browned stirring occasionally. Now cone the Brussels sprouts. Add these and cook, continuing to stir occasionally for 10 minutes or until the the sprouts can be seen to be tender when pierced with a fork.

Serve and enjoy!
