Avocado is known as a butter pear, because of its unctuous flesh or also as alligator pear, because of its textured skin. It only ripens after it has been harvested. It can change its colour from a dark green to a very deep purple or even black when it is ripe. Ripeness is determined not only by color, but most of all by pressure.

If the avocado yields to firm gentle pressure, you will know it is ripe and ready to be eaten. If it’s very soft, it is most likely overripe and it’s then very mushy. Also it is ready to be eaten when it’s easy to peel off the skin with your fingers (not even using a knife) when you cut it in half.

The flesh is prone to enzymatic browning. It turns brown quickly after exposure to air. To prevent this process, in most of recipes it is advised to squeeze lime or lemon and add the juice to avocados after they are peeled.

Avocados are rich and creamy

They add extra flavour to a dish, just like butter or mayonnaise, but they are so much healthier. Avocados are packed with protein and high in healthy fat – monounsaturated fat – that helps lower bad cholesterol.

They are a good source of 20 vitamins and minerals, including lutein – for your eyes, potassium – for a good blood pressure, folic acid – best in pregnancy. They contain vitamin C, E and group of vitamin B.

Avocados are great for low carbohydrates diet as they are low is sugar and also contain fibre. No doubt avocado is a super fruit that is used very often as a vegetable.It is used in both savory and sweet dishes.

The most popular use is as a base for dip known as Guacamole – very often eaten with tortillas or spread on toast. When you use an avocado dip once, you will give up mayonnaise for good.

The base for any avocado dip

is 1 mashed ripe avocado with 1 tbsp of lime or lemon juice. Firstly cut the avocado lengthwise around the seed, open the two halves and take out the seed. Spoon out the flesh and blend it with blender or mash it with fork.

Garlic avocado dip

*base (1 ripe avocado mashed and mixed with 1 tbs lime/lemon juice)
*2 cloves of garlic (mashed)
*pinch of coriander
*3tbsp natural yoghurt

Mix all ingredients and enjoy.

Chive avocado dip

*base (1 ripe avocado mashed and mixed with 1 tbs lime/lemon juice)
*bunch of chives (cut)
*1 tbsp horseradish
*3 tbsp Greek yoghurt
*pinch of freshly ground black pepper
*pinch of salt

Mix all ingredients and enjoy.

Refreshening avocado dip

*base (1 ripe avocado mashed and mixed with 1 tbs lime/lemon juice)
*1 small cucumber (shredded and squeezed out cucumber water)
*1 tbsp mint (chopped)
*pinch of salt
*3-4 tbsp yoghurt (optional)

Mix all ingredients and enjoy.

Egg avocado dip

*3eggs (hard boiled and finely chopped)
*1 clove of garlic
*2tbsp Greek yoghurt
*pinch of freshly ground black pepper
*pinch of salt

Chocolate avocado dip

*base (1 ripe avocado mashed and mixed with 1 tbs lime/lemon juice)
*1tbsp cocoa powder
*1tbsp honey
*0.5 small banana (mashed, optional)
