Lunch On-The-Go

As an endurance athlete, working mother and graduate student it can be challenging to consume enough nutrients throughout the day to stay energized and perform at my best.

This recipe resulted from my personal frustrations with preparing and consuming a large salad while attempting to juggle client phone calls and a toddler hanging off my leg.  Equally bored with the monotony of a salad day after day, I decided to rebel and throw all the ingredients into a blender.

A few weeks later I had experimented with the recipe until it was something my husband and son actually enjoy!  If you’re looking for a nutrient-packed, high-fiber and low calorie almond milk smoothie give this recipe a try.  It’s perfect as an energizing mid-day snack or a meal substitute that can be taken on-the-go!

Ingredients:

– 1 cup unsweetened vanilla almond milk

– ½ medium cucumber

– 1 cup spinach

– 1 cup kale

– 5 baby carrots

– ½ cup broccoli

– ¼ cup frozen blueberries

– ½ cup frozen fruit blend of your choice (such as a pineapple, peach, grape, strawberry variety)

– 1 tsp. olive oil (to enhance nutrient absorption and fat burning benefits)

Directions:

Combine all ingredients in a high-powered blender until smooth.

Refrigerate if not immediately consumed.

This recipe was created as I was in search of the perfect evening smoothie to cure a nagging sweet tooth and serve as a balanced snack to fuel the following morning’s workout.  This almond milk smoothie is a hydrating, protein-packed beverage that will satisfy your hunger while providing the nutrition to help your muscles repair and recover.

Ingredients:

– 1 cup unsweetened vanilla or chocolate almond milk

– 1 tbsp. almond butter

– 1 scoop of your favorite protein powder

– 1 small frozen banana

– A few ice cubes or additional water to achieve desired consistency

Directions:

Combine all ingredients in a high-powered blender until smooth.

Mid-day Pick-Me-Up

Try this flavorful blended coffee drink as a low calorie and inexpensive alternative to your favorite coffeehouse beverage.  Almond milk adds a burst of vanilla flavor and a savory creamy consistency that will leave your taste buds delighted!

Ingredients:

– 4 ounces unsweetened vanilla almond milk

– 6 ounces cold coffee

– 1 packet stevia, or sweetener of choice

– 1 tbsp. sugar free vanilla or caramel coffee syrup

– Ice for desired consistency

Directions:

Combine all ingredients in a blender until smooth.
