Feeling starved when coming home from work?

Here are some quick, tasty and healthy ideas for dinner with chicken. Chicken is one of the easiest, fastest and healthiest ingredients to cook.

We all know the classic Cesar’s salad, but I am not going to bore you with routine chicken recipes. Indulge in those three quick ideas for dinner!

1) Creamy chicken curry with vegetables

Serves: 4
Cooking time: 20 minutes

Ingredients

• 2 chicken breast fillets, cubed
• 3 tablespoons virgin olive oil
• 1 onion, finely chopped
• 1 red and 1 green pepper sliced thinly
• 5-6 white mushrooms, sliced
• 1 tablespoon red curry paste
• 1 package cream cheese (low fat if you are on a diet)
• ½ cup chicken broth
• 2 spring onions, finely chopped
Salt, freshly ground black pepper
• a pinch of chopped fresh coriander

Method

1. Heat the oil in a frying pan, brown the chicken (almost cooked)
2. Add the onion and the peppers and allow to wilt without changing colour
3. Add the mushrooms and let them evaporate their fluids
4. Add the curry paste and stir well
5. Finally add the broth and cream cheese
6. Add salt and pepper and simmer the sauce until thickens
7. Add the spring onions and coriander and stir
8. Serve with rice

2) Chicken and rice salad

Serves: 4
Cooking time: 10 minutes

Ingredients
• 2 cups boiled rice
• 2 small cucumbers (with their skin)
• 2 carrots
• 2 stalks of celery
• 1 cup boiled garden peas
• 1 cup boiled corn
• 1 chicken breast fillet

For the yoghurt sauce

• 1 low fat yogurt (200g)
• 2 tablespoons mayonnaise (if you are on a diet low fat)
• 1 tablespoons mustard
• 1 tablespoon lemon juice
• 1 pinch of salt

Method

1. Cut the cucumbers and the carrots. Peel the celery from the fibers and finely chop
2. Put all the ingredients together in a deep salad bowl and add the rice, peas and corn
3. Finely chop the cooked chicken breast and pour over the salad
4. Make the sauce: mix well in a bowl all the ingredients and pour it over the salad Mix to go everywhere and serve

3) Leftover chicken and mushroom tagliatelle

Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients

• 500g tagliatelle (or any other pasta you prefer)
• ¼ cup olive oil
• 1 chopped onion
• 1 garlic clove
• 300g white mushrooms sliced
• 2 tins chopped tomatoes
• ¼ cup white wine
• 2 tablespoons Greek style yogurt
• Left overs chopped chicken
• Cheese, grated
• Salt, freshly ground black pepper

Method

1. Heat the olive oil and fry the onion for a few minutes
2. Add the garlic and mushrooms and let them fry until their water gets evaporated
3. Add the chicken, add the wine and let it get evaporated
4. Add the tomatoes and season
5. Allow to boil for 10 minutes over medium heat
6. Boil and drain the tagliatelle and pour the sauce
7. Add the yogurt and mix. Serve with grated cheese
