Paleo Breakfast Bread

Bread is such a prevalent foodstuff in pretty much all societies and cultures around the world and there are so many varieties and baking techniques attached to it. However it does tend to get quite a lot of bad press when it comes to talk of healthy diets and weight loss. So now is the ideal time for the paleo interpretation of this hugely versatile food!

To create your own Paleo Breakfast Bread follow Pete’s instructions.
Note: makes 1 loaf/8 slices
– 250g (1 cup) roasted almond butter (100% almonds)
– 4 free-range organic eggs
– 4 tablespoons honey
– 1 teaspoon vanilla powder
– ½ teaspoon stevia
– ½ teaspoon Celtic sea salt
– ½ teaspoon baking soda
– 2 tablespoon cinnamon
Preheat the oven to 160°C. Grease a 20cm × 12cm loaf tin with a little coconut oil, then line the base and sides with baking paper.
In a large bowl, using a hand blender, mix the almond butter until creamy. Mix in eggs, honey, vanilla and stevia.
Add the salt, baking soda and cinnamon and mix well with the hand blender until all ingredients are combined.
Spoon the batter into the prepared loaf tin and spread out evenly with a spatula. Bake in the oven for 25 minutes or until a skewer inserted in the centre comes out clean.
Remove the bread from the oven and cool in the tin for 10 minutes, then carefully turn out onto a wire rack. Cool for 10-20 minutes. Slice and serve toasted spread with some coconut oil or almond butter.
