Years ago when I first started out on my healthy journey, I struggled to accept that there would be some very big and less than enticing changes. I couldn’t stomach the realization that I would not have ice cream ever again!

Having discovered I had some issues with dairy products I knew I had to cut it out and I also needed to seriously cut out refined sugar too. What to do, what to do?!

After doing some serious research, I have discovered that I could still have ice cream but a healthier option. You can probably imagine just what a joyous discovery this has been!

Good news, there are healthier options!

You can now get some healthy options in good health stores. But there is no doubt about it that you pay a premium at the cash till and I also noticed that some have one or two additions that don’t quite sit well with me on the healthy spectrum. So it was time to take things into my own hands…

I took to experimenting with different produce and products to make my own healthy ice cream option and I’ve had some fun along the way.

I have come up with a variety of flavours but I’m going to let you in on one of my recipes. Try them out to see if you like them and come up with a few ideas of your own.

My recipe is not just healthy and packed full of good nutrients but it’s also dairy and sugar free.

I mentioned I don’t do very well with dairy, as I’m sure it’s the same for many who are lactose intolerant.

However if you don’t have an issue with dairy, feel free to swap the plant milk option for organic milk instead and you’re good to go:

Nutty Banana Ice Cream

Serves 4

Ingredients

– 2 ripe frozen bananas
– 1 cup almond milk
– ½ cup almond meal
– 1 tsp. vanilla extract
– 2 tbsp. virgin coconut oil (liquid at room temperature)
– 1 tbsp. psyllium husk
– ¼ tsp. cinnamon
– 1 tbsp. maple or date syrup (can use date syrup, stevia or sweetener of choice, optional though)
– 2 tbsp. cacao powder (optional – add this for yummy chocolate ice cream)
– ½ cup chopped nuts (can use a mixed option of almonds and hazelnuts)
– ¼ cup coconut flakes

Directions

1. Place the first 7 ingredients into your Vitamix (or any blender will do) and blend until smooth.

2. Please note ripe bananas are usually quite sweet enough so you might not need the maple syrup so taste first to check. If you do need to sweeten, add the maple syrup

3. Add the cacao powder, if you’re going for the chocolate ice cream option and blend in

4. Pour in a bowl and mix in the chopped nuts and coconut flakes or use as topping on your ice cream (I personally like a bit of crunch with mine so I mix it in)

5. Place in the freezer for about 45 minutes to an hour to set properly

6. Enjoy!
