I don’t know about you, but I LOVE pancakes. I think they are my favorite breakfast food, which I will eat for any meal anytime of the day.

But probably like you, when I go out to breakfast I feel like I shouldn’t order the pancakes (unless I’m indulging that day) because they aren’t clean and they’re full of added sugar. Well, I have a solution for that!

I enjoy experimenting with recipes for clean eating pancakes, and have put together my favorite one’s for you. These recipes will make every morning feel like a Sunday morning.

Why go out and wait for a table, only to get room temperature food that isn’t good for you, when you can stay home and have your own fresh cooked, clean pancakes that will taste better than anything you can find in a restaurant?!

And for added nutritional value, you can put a handful of spinach into any of the recipes that use a blender. You can’t even taste it, but you’ll get an extra serving of veggies for the day!

Chocolate Banana Protein Pancakes (These are my absolute favorite!)

Makes 1 serving
Serving Size: 4-5 small pancakes
Prep Time: 5 minutes
Cook time: 7-10 minutes

Pancakes:
1 banana
1 whole egg
1 egg white
1 scoop plant-based vanilla protein powder
2 T cacao powder
Splash of vanilla extract
Splash of almond milk
Pinch of baking soda
Pinch of baking powder

Topping (Optional, but this MAKES the pancakes):
1 scoop plant-based vanilla protein powder
1 banana
1 apple
Splash of almond milk

Other ingredients:
3-4 whole strawberries cut up into small pieces (or use any other kind of fruit you like)

In a blender, mix all pancake ingredients until smooth.

In a bowl stir banana mixture with small pieces of cut up strawberry. Heat non-stick pan over medium heat. Spray pan with non-stick cooking spray and pour mixture into pan as several small pancakes. Cook until batter bubbles and then flip. Cook a few minutes more. They are sweet enough to not need any syrup or honey, but I love them even more with the optional topping.

For the topping, rinse out the blender, add topping ingredients and blend until smooth. The topping should be the consistency of pudding. Stack pancakes on plates, distribute topping mix between pancakes and then drizzle the remainder over the top. Delicious!!

Chocolate Madness Pancakes

Makes 1 serving
Serving Size: 1 big pancake or 4-5 smaller ones
Prep Time: 5 minutes
Cook time: 7-10 minutes

½ c oat flour
1 scoop plant-based chocolate protein powder
2 T cacao powder
Pinch baking soda
Pinch baking powder
½ T vanilla extract
½ c almond milk
1 egg
1 banana

Combine all ingredients in a blender until well mixed. Heat non-stick pan over medium heat. Spray pan with non-stick cooking spray and pour mixture into pan, either as one big pancake or several smaller pancakes. Cook until batter bubbles and then flip. Cook a few minutes more. Serve with agave nectar, honey, sugar free syrup, or berry topping mix in recipe above or below.

Fruit Blast Protein Pancakes

Makes 1 serving
Serving Size: 4-5 medium pancakes
Prep Time: 5 minutes
Cook time: 7-10 minutes

Pancakes:
1 banana
2 eggs
1 scoop plant-based vanilla protein powder
½ c almond milk
Splash of vanilla extract

Topping:
1-1/2c mixed berries
1 scoop vanilla protein powder

Combine all pancake ingredients in a blender until well mixed. Heat non-stick pan over medium heat. Spray pan with non-stick cooking spray and pour mixture into pan, either as one big pancake or several smaller pancakes. Cook until batter bubbles and then flip. Cook a few minutes more.

For the topping, rinse out the blender and add topping ingredients and blend until smooth. You may need to add a small amount of almond milk to get the desired consistency. The topping should be the consistency of pudding. Stack pancakes on plates, distribute topping mix between pancakes and then drizzle the remainder over the top.

Old Fashioned Protein Pancakes

Makes 1 serving
Serving Size: 1 big pancake
Prep Time: 5 minutes
Cook time: 7-10 minutes

2 eggs
2 egg whites
¼ c quick cooking oats
Cinnamon to taste

Mix all ingredients with a fork in a bowl. Heat non-stick pan on medium heat. Spray pan with non-stick cooking spray and pour pancake mixture into pan. Cover and cook for 5 minutes (or until not runny), then flip. Cook a few minutes more. Serve with agave nectar, honey, or sugar free syrup.
